Friends and I usually get there at 5 pm so we can cone off parking spots for the 5th gens. I didn't make the last one but there were many more Camaros of all gens there last week, and as more people hear about it, the more that show up.
There are more get-togethers around town during the weekend in Plano, but that's quite a hike for you. I assume weekdays would work best for you?
