I would say that for many people looking for fuel efficiency, 30+ MPG just isn't enough anymore. They are looking towards the hybrid cars and battery assisted cars that get well over 40 MPG. Which at this time don't make all that much power.
With the growing focus on global warming, we might see a huge crackdown on emissions within the next ten years that forces most cars to be of a hybrid or maybe even fully electric design.

All of today's cars, including the Mustang and 'vette, pass strict emissions standards and are quite environmentally friendly. The hybrid technology is very, very expensive and is not yet conclusively more fuel efficient than regular gasoline cars. For example, a hybrid Honda Civic is not that much more fuel efficient than the regular gasoline version. But the hybrid version is quite a bit more expensive. Time will tell on these technologies. But I think there will always be a craving and demand for high horsepower cars, especially now since the technology for building them is so much better.
