OP,

You definitely need to keep an eye on this. 2 quarts every 1000 miles is TOO MUCH...even for the LLT...which is known to eat up oil. Mine doesn't seem to, but then again I only have under 17,000 miles on my car and I do oil changes around every 3,000 miles.

Here is a tip for you. Do not check the oil when you engine is hot. Check it when its cool...say in the morning before you take it out for the day. I have read in multiple cases where the LLT gave incorrect oil dipstick readings when checked hot, and oil was added, and the next thing you know there is too much oil in the car.

It was very possible that when you mentioned checking the oil just before leaving at the dealership that the reading you got was incorrect due to the engine being hot and the oil not having fully drained back into the pan yet.

The LLT also has issues with bearings going out, which eats the oil and ultimately can mean the death of your engine. The best explanation I've been told is that the issue is usually caused by the engine not being ran long enough over multiple drives to get hot enough to burn off fuel/water contaminates in the oil. These contaminates eventually lead to the failure of the bearings.

I agree with an earlier poster saying you should open up your intake and have a look at the amount of oil in the intake (of course, the dealership may have already cleaned that out, but still could be worth a look if you getting a lot of intake consumption). Just remove the top lid thing off the top of the intake and take a look. Back bolt or two might be difficult to get to, but overall should be easy.

In the end, you really should be documenting what is happening so you can arm yourself for a potential engine failure. Not to mention, lower oil levels also seem to increase the failure rate of the timing chain, which you may also need to have changed.
