When you increase the number of rows, you actually reduce the back-pressure the core creates, so it should not increase. That said, depending on location, you should be careful during the oil changes to make sure your big oil cooler is not empty when you start the engine The oil pump is right before the oil cooler adapter, so it also stops most of the drainage, but I still worry about it. I fully press gas and clutch pedals and start the car, which instead just cranks it (does not do ignition). You can do that 10 seconds at a time a few times (30 seconds apart to cool down the starter), which would fill the lines and the cooler.

Anyhow, my oil cooler has almost exact same length to Pete's, and actually much wider, but I don't think it's sufficient.
Mine:
Setrab 72-Row, Series 1 Oil Cooler [Part # 50-172-7612]
4.5" wide core (115mm)
72 rows or 22.5" (571.5mm) core height

Pete's:
Overall Height (in): 5.875 in.
Overall Width (in): 21.000 in.
Overall Thickness (in): 3.000 in.

As you can see, mine's actually wider, and taller, yet it's not enough. One thing I like on Pete's core is that it has the ports at opposite ends.

Anyhow, my cooler is rated at 40K+ btu/hr, and I am running into exact same issues as you did. I hit 297 degrees in 10-11 laps.

If you look carefully, the gauge on the left in front of the shifter reads the oil temp from the oil cooler adapter.
