I brought my 94 C4 to Manny at Dasilva for a clutch replacement and other repairs. Mannys shop and crew are great. He even found a machinist to save my dual-mass flywheel as I was loathe to convert to a heavy single mass one. I also own a 2010 2ss and a 96 Z28 and my cars will be going to Manny for repair and upgrades in the future.
Ive never used the other shops so I can speak to their abilities.
I'm sure all three would do well for what you have planned.
