I'm more into straight line performance than corner carving, but that might just be because taking one at more than 25 in a Mustang gets scary. Getting the performance to match my 450 rwhp Mach 1 in a gen 5 Camaro sounds like it's simple as heads/cam/intake and a dyno tune. Is that right? What's the typical cost of getting a shop to install that, including parts and dyno tune? $2500-3000?

Depending on cams install that could be around $2500 right there. But with headers, cams, intake, dyno, you're probably looking about $4000 total but again depends on what kind of cams you go with if you do plan on going to Camaro. Ported heads you can probably add another $500 and up I believe, could be wrong though.
