Anyways, the small block will do fine. A nice 350 sounds about right. I was going to say big block just because I am a horsepower/torque freak!! lol
But, you can do a nice small block 350 with a nice cam and nice carb and good set of headers/exhaust and it will sound mean and move pretty good. (Plus a big block may take it's toll on the stock rear end after a while.)

If you are not a total knucklehead a 350/305 TPI motor will get good MPG too. They can just chug along in OD and barely use any gas.
I used to drive an 87 Iroc-Z 50 miles ONE WAY to work every day for about a year. I always got in the high 20's and I had a few mods, intake, exhaust, headers, chipped. So the car moved really nice when I jumped on it.
just a suggestion. I am not trying to tell you what to do, its just that I have had 9 Camaros, and that is not including the 2010 2SS/RS I will be buying. SO I have had a few chances to mess with these cars, or I would not be putting my 2 cents in, haha.
Good Luck.

Sounds like a good plan!
