I had it in my head that fenders are a fairly important structural member in a unibody (vs Corvettes spaceframe) design -particularly with regards to absorbing crash energy. And that changing it would require retesting the car, which can't be cheap. On the other hand, hoods, roofs, door skins, trunk lids, fascias ... all those seem like they're just there to keep the rain out and the air flowing nicely.

Structure is all under the fenders. Just for show, shape and holding paint.
Remember the Gen4 Camaro had plastic fenders.
