Is the car modded?
A $hit ton of 4th gens that are modded experience this problem. Mine did it when I switched to long tubes. The heat boils the clutch fluid and leaves the slave dry so the pedal has no fluid to push it back up. Hence why when you pull it up it works normal again. Mine did this even after wrapping my headers and the hydraulic line. Im not saying this is your problem, but theres a good chance it is.
