Welcome! I have the same car so hopefully I've answered your questions here.
1. The sound you hear is the clutch fork rattling because you let it out too fast. It's a heavy V-8 clutch so you hear it rattle when you let it jump out too fast since it weighs quite a bit. If you hear a heavy clunk that's the sound of the driveshaft taking up slack when engaged, it requires a bit of finesse to engage the clutch without clunking in this car. You'll learn this over time, it's not hurting anything. The driveshaft also sits up high in the car so it can be heard more easily.
2. You should not be allowing the car to coast at slow speed in second gear like that. It's called lugging and it's bad for the drive train and clutch. Your'e going too slow and in too low of a gear for it to be coasting. The clutch is dragging off the flywheel when you do this. Your'e also abusing the u-joints on the drive shaft by doing this. Heck, my DD Chevy Cobalt 4 banger will do that if I allow it too. Compression from the engine is going to try and push that slow gear anyway which is probably what it sounds like when you say it's surging. I wouldn't let it do that, I've been driving manuals for years and I can tell that this is a bad practice.
