I'm with the other folks, building a motor is definitely not necessary for what you want to achieve. But I understand what it's like to be bit by the bug and having a complete LS3 sitting around isn't a bad deal either (old hotrod anyone??).

But, I digress - we had a 418 built from Texas Speed and I am very happy with it. It went in one of our builds - 2010 Camaro 418ci (check out this link for more info). We did a Procharger F1R on it and made 800hp on 15lbs. Way more than you want to make, but just wanted to show you the potential there in case you get hungry for more later on.
