Unhappy 2011 v6 camaro still overheats after changing everything

after driving for a while I eventually get the engine temp high warning - idle engine. then after a little more stop engine. THe gauges in the middle next to the gear shifter read normal but the guage in the dash goes to max and then back to normal randomly. We started by replacing the radiator and fan but it kept happening so we replaced the thermostat. It is still happening anyone know of any fixes?

The car goes into limp mode sometimes which disables power braking and steering which is so dangerous esp when im on the parkway. The car isnt actually overheating it just thinks it is.

That makes me think there's a fault with the temperature sensor.

First, check the wires and connections. If they are good, a replacement sensor is fairly cheap... install videos available on YouTube

If your still effing with this, there is a chassis ground for the instrument cluster that might be loose or corroded. If memory serves, it under the left side dash behind the left outer kick panel.
