Gutted cats: Air flow disruption
If I use gutted cats rather than connecting test pipes, will the exhaust airflow become more turbulent and disruptive to the point of losing power?

Not to any point that you'd notice. But installing headers with o/r pipes are going to actually give you power
The manifolds are the real power robber combined with the 4 cats.
