I don't know too much about baja or whatever that style of racing is called these days but I would think that you only need so much power to get one moving, LS7 sounds like more weight and more control issues with that excess of power available.

the extra weight would only come from beefed up drive components to handle the extra power. The actual engine weighs about the same, probably lighter.

As far as having too much power, I'm sure that most racers would take the extra 105 ponies even if it meant a little less control in the turns. I'm thinking they went with the LS2 because of either engine restrictions or cost.
