Give John at CCW a call. He is working on a setup that requires the v6 brakes and will get down to the bias full slick for monster launches. He has some guys doing a quick switch setup to go from v8 to v6 brakes.

I use the 16x4 CCW Classic and 4th Gen F body brakes, I can actualy run a 15" wheel if I wanted in the front.
The rear are a 16x9.5 with a 7" backspacing, i use a spacer on the back beacuse the rear wheels are made for a c5 Vette and not a Camaro. The 16" CCW made for the Fbody cars are a little narrower. No spacer needed.
