All you are changing when you do the 160 is when the fan comes on and off. Nothing else.

If you combined the thermostat and fan tuning, you will have lower overall temps.

Just a FYI about fan settings. My L99 low fan is programmed from the factory to come on at 221 and off at 210 degrees. Hi fan comes on at 228 degrees and off at 217 per EFILive. The A/C will also turn on the fans usually quicker with high hi-side pressures a lot of the time. A 160 thermostat should have the temp settings reprogrammed to work correctly.

to work more efficiently. the t-stat will still work the same whether you have the fans turned on sooner or not.

That is a better choice of words. The thermostat will work the same but the coolant temp should be cooler with lower fan temp settings.
