I just did the full course Saturday. I'll try to edit the GoPro footage soon. Trying to find a good portion where I wasn't getting passed, lol. I really need new tires.

I have been looking at various videos online.

I assume that we will be running the "Grand Course With Chicane", because that is what most of the other track day groups seem to run. Does someone know for sure and could confirm?

Though personally I would rather run it without the Chicane

Yes Grand Course with chicane. We would be crazy to run without it, however I'm with you on the speed factor.

And, in case anyone's interested, here's the track map with corners numbered (so you can line them up to Danny's walk-through in the video above). Pit In/Out in red does not seem to line up with the videos - I think you pit out at 18. Dots are flag stations I guess.
