Aren't you losing the ride when you go as low as 30's? Or is there not a big difference between the 30-35 profile tires?

30 is not a size, it is a percentage. The number means nothing unless you know the width of the tire.
Example, 315/25-22 Translation: 315 millimeters wide Sidewall thickness is 25% of the width (315mm x 0.25 = 78.75 mm = 3.1 inches) 22 inch wheel size

Will they rub?
If I go with a slightly wider 19" wheel it will fit when driving straight... but will it rub when turning the wheel? Say instead of the 245/50R19 I go with 265/45R19 will they rub when turning? Basically, I just want to know how deep the wheel well is.
