Well, neither one would be particularly fair. The Viking would drown in the ocean with all his equipment while a dolphin would only be able to flop around on dry land. How about in a 3-4 foot deep pool? Should be enough to hinder both the Viking and the dolphin without making it impossible for them to move around.

That seems fair. Does the Viking have any weapons? If so, then yes, the Viking should win. If not, then the dolphin could possibly knock out the Viking and he could drown...
