Update: to remove 2012 air bag you must remove the 3 plastic covers around the turn/ windshield wiper lever, Then turn the wheel 180 degrees and install a screw driver from the rear of the wheel, You will have the 2 release springs there like in the past, but you dont push in the spring, you slide the spring to the center.

On a scale of 1-10 how hard is this? I am wanting to maybe do this over my christmas break when I am not in school but I am worried I am gonna take everything apart, and then have no idea how to put it back together.

Its a 6-7 IMO, take your time and set the parts with the bolts and it will all go back.

Where is in the info about installing the HUD switch that is beside the steering wheel?
I'm saving up mod money and I'm torn between either HUD or the rearview mirror camera. The HUD install seems pretty intense. I'm wondering if it's really worth all the effort. Never had HUD before and some people tell me they can't live without it and others say after a while you never pay attention to it.

You got me there, cut hole for the HUD switch, use headlight switch as template and mirror it then your done.
