The Challenger got a number of things changed this MY, camber adjustments, steering ratio and so on.
I haven't seen a total list, only a few things that I was concerned about. You'll aomost always be better going aftermarket. Especially if you go Pedders.

I'll be doing the longer sway bars for the possible stability benefit plus the more solid and dependable design of the end links being further out on the LCA right by the wheels in the rear.

I don't know if it is always "better" to go aftermarket. You will probably corner better but will likely lose ride quality unless the OEM cheaped out on shocks/struts or there is a design issue.
Going aftermarket is much much more expensive.
Staying OE with the improvements that Chevy has done and going to a stickier tire can yield similiar results.
