....your dealer can print out the paperwork on their computer showing the order, order details, options, build date etc...

Mine came with a business card for the ZL1 and 1LE Registry in the center console. On the back of the card was the handwritten message, "To the owner please enjoy your ZL1. Nice Colour! Nov 7/12 927pm" followed by initials. I guess I was just one of the lucky ones?

They are close. Not sure where the dealer got the date from. Or which is right.
I think that is the date and time the frame rail was assembled thus the difference between the car build date (completion) and frame build date.

Ask your dealer to print up the "GM Order workbench" Event History - Order #(your number here). This is what they gave me:

I think they are typically within 24 hours of each other. Frame sticker on my SS and build sheet were same date. Haven't looked at the ZL1.

Mine is 6 days apart, but the frame rail was made at the end of the day on August 26th Friday. My car wasn't completed until September 1st. 2011.
Maybe convertible assembly takes longer
I contacted my dealer and she is going to send me the build sheet. That way I will know the exact dates.

When I toured the Oshawa assembly plant I inspected a completed frame/engine assembly. It was dated Seversal days before, and had not been mated to it's body. Like said above, the date you see on the ft rail can only be used as an estimate.
