It could be the AC relay. I recently had a similar issue with my wife’s car where the AC relay was bad. Once I replaced it the AC works perfectly. These tend to go bad from a lot of heat. The relays are cheap and worth a shot if nothing else is working.

If I may jump in OP I'm having a similar problem. My cluster gauge goes to minimum (160), fans run on high even after key is off, AC only blows air. Disconnecting battery cable resets it. ?

your thermostat is bad too, just replace it and all will be well.

as puddin says, could also be the temp sensor. I would put a meter on the temp thermistor before digging out the thermostat.
