I completely understand what you are saying. Lower profile tires are less forgiving to correct rim sizes but a wheel as wide as his requires a wider tire, that wider tire could have a higher or lower aspect ratio, it doesn't matter as long as the tire is of the correct width for the rim.From what has been posted, I'm in doubt that the pervious tires were the correct width either but that depends on the manufacturers recommended rime size, they are not all created equal.

May I suggest that perhaps the reason the tire shop suggested a lower profile tire in order to lower the car was because the wheels he sold him were the wrong offset, putting the wheel out further than ideal. The shop was trying to cover their bad wheel specs by giving a little more fender clearance, making fender rub less likely. Nothing ruins a new tire/wheel purchase like hitting your fenders. Don't ask me how I know.
