It switches back and forth a lot in quite a few episodes, my guess is that they need 2 cars sometimes to shoot their episodes on schedule. One car can go out and do the car chase scenes and then the actors can go out and do their talking/story scenes in the other car.

They really probably don't give 2 shits since only "camaro people" are gonna notice
