Tried it with both icons on (everything disabled) in Sport mode. I tried by just letting off the brake and mashing the gas, also tried holding brake until 1500 rpm and going and neither would smoke, just a slight scratch-scratch-scratch noise but no spin.

in most of the cases in this thread, Stability control is taking over and that's why you cannot spin your tires. Especially those trying in an A6 without holding the brake.
If the system senses lateral movement in the rear it will immediately apply brakes on the side that the movement detected and you'll just sit there. My M6 car does this occasionally, and without fail at the track after the waterbox if I do not turn off stability control.

Try turning both TC and STS off, and then doing the burnout while holding the brake gently. You do not need to put it on the floor, simply enough to keep the car from rolling forward.

You should be rewarded with the slight screech, and acrid white smoke of rubber on concrete very quickly.

Just a thought... the weather has been pretty warm in Ohio and those Pirellis hook a lot better when they're warm. You could just be hooking better due to stickier tires. It's going to be cool here in Ohio tonight. Go out at 5 am and give 'er a go.

This thread reminds me why I got V6 manual versus a V8 auto. Not only did I save $8,000, but I just rev it to 3,500 rpm and dump the clutch. I can easily do my burnouts and get 2nd and 3rd gear scratches.

Doing burnouts at 57 is living life.

I can't believe all you V8 A6 guys are having a problem with this. It's easy.

Step 1: Turn off all nannies. Traction Control and Stability Control.
Step 2: Press firmly on the brake.
Step 3: Select "S" on the transmission gear selector.
Step 4: Keep pressing firmly on the brake.
Step 5: Mash the go pedal (while still on brake)
Step 6: Enjoy your lung full of site smoke.

Simple.
