Gain at the track? Since I've done a 3200 stall converter recently I'm a big fan of converter before gears. You dont even know its there till you pound it. But since your asking about gears I'll say 2 tenths maybe...it from 12 .9 to 12.8 buy my 60 ft went from 2.1..it 2.0 down to 1.9 consistently on street tires....they spin alot with traction control off and gears.

How does that affect day to day drivability, if at all?

I looked into the 3.91:1 rear and it didn't appear it would drastically affect the cars day to day manners much at all. Even on long highway stretches.

I love the car now. The fords lack a little of the low end torque the Chevys has. With the stall. I leave every car sitting at the line. It leaves hard! But once you get up to speed. It locks up. And you can cruise at 70mph and turn 1500RPMs. It's the best of both worlds. Power off the line and a great 60ft. But no loss of highway manners. Just watch how hard it launches. The race below is against a ZO6 Corvette. 3800 stall with 3.55 gears.

My wife has no interest in talking about it. But I know for a fact if she ever came to the track with me she would be hooked after one run.
