Headroom and helmet issues...take a look here
So as an executive recruiter I sometimes have access to Senior Management and GM is one of larger accounts so I cashed in on a chance to meet the big wigs! (CEO of GM) introduced me to (VP of Design GM NA) who then introduced me to (Lead Engineer at Chevrolet).
I had a chance to question (Lead Engineer at Chevrolet) and one of the topics came up about head room and the Camaro especially when racing. He let me in on an industry secret (and I am sharing as I see so many have issues with the sunroof and head room, etc)…he said if you have a sunroof to open the shade and open the sunroof up (not all the way out and back). That actually creates a better aerodynamic and should increase your quarter mile time as well! And of course you will gain more head room for your helmet! He did say its not advertised in the same way GM does not advertise long tube headers or catch cans are fantastic investments for the Camaro. I thought it was pretty funny and that he was messing with me until (Lead Engineer at Chevrolet) raced and obtain a base line. Then he did the sunroof up and raced and actually ran a slightly better time. Not by much but enough to make you say hmmmmmmmmmmm. -Edited only to remove names-

Unfortunately, at most tracks I've been to the windows have to be up and the sunroof closed. Just lean the seat back more and lower it as far as it will go. If you are tall and have a roll bar, you are screwed.
