I like the first recipe, but I'd add a little sage to it. I like sage with poultry, especially turkey.

I am going to smoke my turkey. I plan to use some softened butter mixed with minced garlic, sage, and a little salt. I'll put that under the skin before putting it on the smoker in the morning.

You don't really need to use butter if you're going to fry your turkey though.

Ive never tried smoked Turkey. How does it compare to a fried one?

I've had both. They are both marvelous, but I love the added smokey flavor in the smoked bird. Also, I didn't want to deal with the hot oil in the fryer.

We just make up dressing w/some popcorn in it. Stuff the turkey with the dressing. Pop it in the oven at 350. When the a$$ end blows out, it's done.

Slow long cooking = tender.

The smoker only has a temp of about 225 to 250 degrees F.

That is the best way to cook ribs for example.

If you like it hot and spicy go with the Jerk Turkey rub. For something milder, use the Cajun recipe. The cajun is probably too spicy for most but I like it so hot it makes my eyes water and nose run.
