Water temp

I'm curious on what water temp everyone is running? Reason I'm asking is during the spring-fall months I'm showing 190-195, but during winter driving when the weather is in the 20-30s, my water temp is always 205-215 while highway driving at 75-80 mph. If I slow to 65 mph the temps drop to 198-200. I do have a P1 Procharger kit, headers and axle back exhaust. Has anyone else noticed the same?? I just don't get why it would run warmer when the weather is so cold compared to summer temps??

I have a 160 degree T stat, and my temps are 184-185 on the highway, 190 idle, city driving.

189/190 degrees highway cruising in 5th gear. Temps climb to 194 degrees in 6th at the same speed (usually around 75 - 80 MPH on the highway). It doesn't matter what the outside temp is in my case, these numbers are always the same. Stock thermostat. In traffic I've never seen higher than 204 degrees and again it doesn't matter how hot or cold the outside temps are.
