Green potatoes chips result from excessive exposure to light, whether by growing through the surface, or due being exposed to light during storage. The green itself is chlorophyll, which is not harmful. However, the same process of photosynthesis that produces chlorophyll also produces compounds called glycoalkaloids, such as solanine, that are toxic in large amounts.

Potatoes are members of the nightshade family (Solanaceae) and contain the toxin solanine mostly in the green parts. While not too likely to be lethal, in quantity it could give you diarrhea and make you feel ill.
Indigenous Peruvians make them edible by mixing in a certain clay(in the manner the French used to mash their grapes for wine) that helps counter the diarrhea. Sort of an Andean Pepto-Bismol. They have been eating some that would be toxic for us for centuries, and I'm told prefer them to the "sweet" ones(our type).
The solanaine is what gives raw spuds their bitter taste, and is mostly removed by cooking, so green Lay's are just more festive.

Why eat green chips when you can have Soylent Green? It has all the nutritional requirements you need and it comes from an eco friendly recycling process. Its a win win for everyone, whats not to like?
