Lidio is good, especially with Mustangs...but if you are getting a LS tune in Mich, you want it tuned by Dr Phil.

I would go with LMS, you can trust them to do the job right. I've got their mail order tunes, and they are spot on. Never had an issue with them, and their customer service is awesome.

Well depending on mileage changing the plugs and wires is definitely something we do on vehicles inbound, we will not force you to do any of it but for the vehicle to be running at its best i would say plugs and wires would not be a bad idea for sure!
