That really looks nice - trying to figure out if I want to do this mod or a carbon fiber dash and door kit

Maybe you could do suede(or other fabric) and the carbon fiber in other places on the inside. For example I'm doing brushed aluminum on the trim around the cluster, around the shifter, and the door handles.

Looks great, I've been wanting to do this myself. I did do the stitching in the seats red, that took a while but it was worth it.

I used a red fabric marker. I belive this is what I used.

They have plenty of stuff on that website that would work. I did buy two, just to have a back up and to touch up as needed. So far none of the color has worn out or faded. I've had it about 8 months now.
