On a bigger shot I figured the 8's would be too hot and would melt.

11.8 on motor and 10.8 on nitrous seems on the rich side. You need to read the plugs after a wot run done correctly. If your thinking colder plugs are causing the afr change, try putting your old hotter plugs in and see if you get the same afr of 11.8 on motor.
