I don't think what you are saying is wrong but I think our engines like the higher octane and burn it well. They are just able to run on 87 with the knock sensors and knock reduction(timing retard). That way the masses can buy them and run cheap gas and be happy.
I'm not saying they can't use 93... I am saying that I haven't seen any evidence they can adjust to more than 91 and GM recommends using "regular" low octane in it.

As a daily driver I pull 20-22MPG on 89 octane, but if I run 87 my 2LS LFX knocks and pings even under the most conservative behavior and pulls 18-20MPG.

On road trips I can pull 30-31MPG using the cruise and A/C at 70MPH using 89 octane.

My preferred fuel is Shell but will also use BP when Shell is not available.

The only aftermarket changes are a catch can, K&N filter in the stock air box and 37PSI in the tires.

My IPF tune brought my fuel economy up from 22.4 average to 23.9 in short term testing- but using the exact same route every day of low speed highway and back roads.
I have no idea about highway fuel economy as it's only been on a trip over 45 minutes once since I've owned it.

If you run high octane in a car that cannot adjust to it, it will not completely burn the charge and it will leave carbon deposits that will effectively raise compression and cause you to NEED higher octane to keep from detonating early because of hot spots in your carbon buildup.
FINALLY!!! The voice of reason!!!!!

But ignore science and facts. It feels faster with 93 octane.
