As an update, I was able to pull codes P0521 and P0522 which are both related to the Oil Pressure sensor. I drove it yesterday and had the appropriate oil pressure reading on the gauge for about 75% of my driving. I will be away for a few weeks and plan to take a look at it again when I return. If that yields nothing new, I will likely be taking it to someone that can diagnose possible electrical issues better than I can.
