I don't think you can powder coat a car unless you wanna destroy it

Powdercoat a whole car? Are you sure you're using the right terminology?

Never heard of somebody actually powder coating a whole car. I mean I guess you can take apart every panel on the car but that would be a butt ton of money and require a huge oven lol

Front end and rear panels are plastic so that wouldn't work either

It's more likely that that car is either plastidipped of has a matte color paint job

That's called plastidipped. Powdercoating is putting it in a huge oven then spraying it and putting it in the oven again.
Plastidip can be peeled off after also.

The terms you're looking for are a matte paint job, or more likely vinyl wrap. Getting a custom paint job is extremely expense, a lot of the cars you're seeing are most likely wrapped (or Plastidipped, but that doesn't last very long like the others). Wrap looks like a custom paint job and lasts for years at a fraction of the price of paint. It's still not cheap to get a car wrapped, but it's significantly cheaper than a custom paint job and achieves the same thing.

How is a paint job of a single color extremely expensive?

Full paint jobs are expensive, especially when done at a reputable shop rather than some budget shop hack job.
