Brembo recommends a min of 3mm clearance ( check their website) to allow for wheel flex so. When I first mounted my after market wheels I only had 1mm of clearance so I added a 3mm billit aluminum hub centric spacers and have been fine ...and still surpassed the minimum 7 lug nut turns.

Car looks good!
what kind of offset though? i think at this point it has come down to the design of the spokes on the rim. Every so often i hear a scrap noise (like once a month) and find a scuff on the caliper

0 issues then? my biggest concern is the tire contacting the fender with the aggressive offset in bumps and corners

Wheels look great OP! With the drop it looks much better.

My rear wheel spokes come so close to the calliper it made me nervous but there hasn't been any issues at all with over a year of driving them. I painted the rear callipers and no issues. I mean they are really close like right on 1mm lol. I have run H&R 10mm, 15mm, 20mm and 25mm spacers on previous cars with no issues what so ever so I wouldn't worry to much if you have to run them. But I'm not going to install them on my camaro because they are already 11" wide rears and sit very flush.
