Where do you guys tap into the electrical system for switched 12 volt power, like for boost gauges etc.?

Open the drivers door. Pop off the side cover of the dash to the fuse panel. (see owners manual) You will find easy access to constant and switched 12 volt sources. There are several empty slots to add new fuses and circuits. You will find here the two (on with key) 20 amp circuits which power the 12 v outlets on the center console.

RPI flat black bezels and rjt license plate frame
STREET SCENE chin splitter

Was hooking up the line lock today and couldnt figure out how to feed the wires threw the fire wall. I googled it and ran across this thread. Awesome post. Helped me out!

Yes, found it on drivers side. Haven't looked on passenger side.
