I second the advice on diesel oil. I've used it for years while treating my motorcycles like race bikes during my 30 mile night time commute. Rotella T6 5w40 actually shifts better at all temperatures than any other oil I've used. Significantly better than Amsoil, marginally better than used Redline. (could be a toss up due to old oil vs new. I'm using redline in the Camaro.) Considering how a motorcycle uses the oil for the gearbox as well, this was a main factor in continuing using the diesel oils. Needless to mention the detergent package with diesel oil will clean EVERYTHING it touches inside your engine.
Any knocking/slapping after rebuild is due to excessive clearances in my opinion. Some of my bikes make 180 horsepower per liter and NONE of them knock on cold starts. I ride year round well below freezing. I think you have an issue... I've only had a vehicle make a knocking/ticking noise that wasn't a lifter tick on one occassion, I pulled in the clutch and it seized instantly.

I would call a couple reputable machinists and ask if their high horsepower engines have piston slap on start up for a comparison. I know they're designed with extra clearance to compensate for expansion during extreme conditions, but how much is too much? All of my previous experience relates to high strung motorcycles, or NA cars with iron blocks. Either way, your engine is less stressed than a stock GSXR1000, and those do not slap or knock unless they're dying.
