I am on Continental Extreme Contact DW's. 305 on the front, and 325 in rear. The Conti's are less wide than the Trofeo's, so running 325 in the rear fills the 11.5 wheel back up. I am very impressed with them in the wet, and the ride is much more street compliant.

Manufacturers are all over the place with tire sizes. In addition some as square shouldered like Michelins or round shouldered like Bridgestones.

I have Bridgestone re-11s, 305s all four corners. Drive fine in 40 degree weather, plus much easier to deal with on the street. Decent on wet pavement. Have not tracked them yet, so can't vouch for them there. I have PSS on my 2012 SS, very nice but they get very greasy on track after a few laps on a warm day. I'm hoping the RE-11s don't have that problem.

I'd just like to point out that the RE11 is a using tire technology that is at least 8 years old. That is eons when considering how far compounds and carcass structure have evolved. The RE11A was released here around 3 to 4 years ago and, laughably, is an even better tire than the RE11 but still 'old' in respect to what is on the market today.
Neither the RE11 nor the RE11A is even relevant in conversation when discussing cream of the crop street tires in 2016. It is unfortunate that Tire Rack's surveys, while extremely helpful to the layperson, don't always paint a true picture. I wish people put more emphasis on testing and doing their own research, and knowing tread compound(which CANNOT be interpreted from TW ratings) trumps tread width in most applications. Again, this is for people who care about getting around the quickest in autocross or track day applications, who also drive to events on the tires that they race with. The Pilot Sport Cup 2 is arguably the best street/light track tire available right now. You'd be doing yourself and the Z/28 a disservice by showing up to a track day on MPSSs or RE11s. Bridgestone RE71R for autocross duty(if running in SCCA's 200TW Street classes), even though they're only available in 285/35/19 for now. 305/30/19 is coming this summer. If you're autocrossing just for fun and want to keep going fast, run the Trofeos or the Pilot Sport Cup 2. Hankook's RS3v2 and Yokohama's AD08R in 305/30/19, while no longer top tier tires for autocross, are still excellent street/autocross/light track day alternatives.

If you want a little more ground clearance (0.5") for daily driving you can run a 305/35/19. Someone on here used the Nitto NT-05, and I had them on my Z/28 wheels (after 305/30 Bridgestone (yuck) and some RS-3). The GT350TP was just released with a Michin Super Sport also in 305/35/19 so there should be more options coming.

Would like to hear from anyone using Pirelli PZeros. They are pretty sticky, decently priced (just under $1500) and have decent tread wear rating @ 220. I know mfrs. have diff methods for calc. tread wear. As point of ref for these, I had them on my Boss and the rears (285s) lasted roughly 10k miles.
