Makes you hungry just looking at it, doesn't it?

So... Last night, I offered to cook dinner when I found out my parents bought some lobster tails. Since my dad is notorious for overcooking meats, I couldn't let him handle something as rare as lobster.
When my parents offered baked potatoes with it, one of the gears in my head started turning, and I decided against it. In it's place, I used some of the food we had sitting around to make a simple pasta side dish of vermicelli, basil, olive oil, tomatoes, and garlic.
While I would have preferred to serve asparagus, we had some green beans that needed to be used up, so I went ahead and steamed those.
The final result was this:

Simply beautiful.

that would be restaurant quality if you took off about half the amount you put on the plate.

Yummy. My wife hates seafood so I don't get it much so just looking at that pic reminds me of what I'm missing. :(

OK - How about this:



Fried up a chopped shallot and a clove of chopped garlic, added 1 lb of shrimp and cooked 4 minutes. Remove shrimp and set aside.

In the same skillet add a 28 oz can of peeled chopped tomatoes. Season with salt & pepper. Cook down a bit to reduce the liquid. Add 1/4 cup white wine and 1/4 cup chicken stock then cook down some more to evaporate half of the liquid. Remove pan from heat and add 1/2 cup mascarpone, 1 cup of chopped fresh arugula, 3 tablespoons chopped fresh tarragon and the cooked shrimp. Stir to blend then toss with cooked penne pasta. Top it with some grated parmesan and serve.

Oh man! It was a hit. We will make this again for sure.
