Possible Thermostat going bad?

I had cooling issues before where my radiator had a leak and I have now since fixed that issue replacing the radiator (simple job). But coming home from the mall on the interstate I switched my DIC to the coolant temp and I was at 212F at 80MPH with no change at all. When I got off and git down to 55MPH my Temps sat at 201 to 207 never reaching below 200F. For now im gonna drive the old beater till I know the issue. Could this be a sign of my thermostat failing? I was going to replace it since I was replacing my coolant lines and along with the radiator but thought nothing of it. Now thinking about it my car is a 2010 2SS so I guess it's never been changed since the previous owner. Any other ideas or things to look into? I just want to be sure anyone has experienced this before I buy one. Also should I get a lower temp thermostat while I'm at it or stay with the oem spec?
Thanks to all with helpful responses
(Also i bleedthe hell out of that car when putting new fluid in. It ould be and air pocket but when I first had it running my Temps went below 200 cruising like 190 to 198 so it leads to belive my thermostat is to do with it.

There may still be air pocket or bad thermostat.

This too, and check and make sure your cooling fans are actually working correctly.. But cruising at 80 it shouldn't be that high. Mine never was. Possibly still some air still trapped in the system..Good luck..
