Engine

Can I pull the engine out attaching the 2 chains from the cherry picker onto the sides of the exhaust manifold bolts still attached?

I wouldn't. I bought a plate that goes over the valley cover to pull mine. There are bigger bolt holes on the front, rear, and sides of the heads. They have a 15mm headed bolt rather than the 13mm the exhaust manifolds have, but the preferred method is still the plate.

Agreed, it may work just fine, but I'd use a different approach if possible to eliminate the chance of breaking any of the header bolts.

and dropping an engine.

I had a hoist fail and drop a big block many years ago. Oil pan and pump pickup was the only damage but it hurt worse than slinging one apart with my right foot.

Regardless whether you’re doing a swap or build it will be the best money you spend on the whole project. Along with the price of a good properly rated lift or hoist.
