You should check out this thread. It has a little bit of what you're looking for.

VVT should make more power throughout the RPM band, but you might have a hard time finding a shop that can tune it properly. I'm sure there are much more knowledgeable people here when it comes to the L99 VVT setup. Mine's an LS3.

Tell us which shop you plan to use for tuning and or install and I can tell you what type of cam to use. Also if you plan to go FI in the future I wouldnt trust the VVT. I see your in TX. Just do yourself a favor and call Andy at ADM. Great guy and shop. They will make you very happy. I am sure he will advise to delete the VVT/DOD. If you just have to use VVT then Texas Speed is also in your neck of the woods.

Keep the VVT, ditch the AFM! The only people who will advise you to delete VVT are those who have not tested it and fitured it out yet to see the potential...true story!

These guys are steering you in a direction I agree with wholeheartedly. It is hard to find a shop that can tune VVT effectively. The usable power across the entire power band is something that is hard to replicate on a NA LS3.

The only reason I would want to ditch the VVT is if I wanted a really aggressive cam.

I would suggest talking to a quality shop and getting something tailored to exactly what you want/expect out of your car. One guys cam choice and idea of street car can be drastically different from yours.

You should definitely talk to your shop, but you could also post a detailed description of what you're looking for right here and we can try to guide you in the right direction. These guys love talking about engines

You'll likely end up spending the same amount either way you go. Keep the VVT. You're in Texas, go drop Texas Speed a line.

I would think he would save quite a bit by sticking with VVT. Correct me if I'm wrong, but he wouldn't have to buy the LS3 converstion kit and wouldn't have to remove the heads to swap out the lifters. That ought to save a ton of time and money.

VVT has nothing to do with the lifters, that's AFM
