When you accelerate, you should not have your foot on the clutch for more than a second or two. As you give the car gas, you should be lifting off the clutch completely, smoothly, and quickly. If you are riding the clutch for any time more than a couple of seconds you are "riding the clutch", slipping it, and wearing the surface down prematurely. This is the cause of your smell - the hydraulic fluid is getting hot because the clutch is not completely engaged or dissengaged from the flywheel.

Also, you should NEVER, EVER, EVER ride the clutch on a hill. If you need practice with a stick shift on a hill, practice. But you may want to do that on another car so you, again, don't burn out the clutch on your brand new Camaro.

With experience, you will not have to ride the clutch on a hill at all - I can be on a 30 degree incline, at a dead stop in traffic, with a semi-truck two inches behind me, and not worry. I keep the car in neutral with just my foot on the brake, and when traffic starts to move, clutch in all the way, engage first gear, and let it out like normal with no worries about rolling back.

It comes with practice. And I suggest you get some.

Slightly off topic but...
I removed the spring that a few of you have mentioned and it does make the clutch a lot smoother. When I took it out it eliminated that springy feeling that usually kicked in just shy of the engagement point.
