If it's coming out dry then it's cooked way too long. A deep fried turkey cooks in about 30 mins for a large turkey and baking takes about an hour and a half. Let the turkey sit for 30 mins before carving and carry over will finish cooking the turkey. Remember the proper temperature for inside the turkey is 150 degrees.

My mom fusses every year that her turkey is so dry, well no wonder you're cooking the blame thing for 6 hours .
