The steering wheel is fine and does not void warranty because it does not block the airbag.
The doors are stock units, as well as the armrest, console, shifter knob, ebrake, glove box, knee bolster, rear deck, rear seats, and roof liner. So, all the electronics is not inhibited in any way.
So, that being said have fun modding.

I can see a dealer not taking responsibility for removing one of your trimmed parts though. For example if a door trim panel needed to be removed by the dealer and it was damaged, I can see them saying it was your fault, not theirs due to the modification. Have you investigated this with Chevy? or do you have experience with the Corvettes you have done?
I think it looks great btw.
The blue isn't for me, but I can sure imagine colors that are. And with the color of the car you are putting that interior in, I know it will be a knock out. And being Ducati owner, I can hardly tell you how much real carbon fiber makes me drool.
