It keeps the hood from opening when racing..basically a safety feature. Many race cars did not have hood hinges or latches, hood pins was the only way to keep the hood on. No hood also allows easier access to the engine.
At least one car came from the factory with a lift off fiberglass hood, held on with four pins..
I think it was a '69-70 Dodge/Plymouth Roadrunner/Superbee with a 440 Six Pack with the Track package. I could be wrong though. Like this..
