This may sound stupid but did you remove the rain drip pan on your hood vent?

Also remove your rubber seal between your hood and engine bay next to the windshield. This allows more airflow during track events.

Not sure this will prevent overheating but it should help.

OP what oil filter are you using? I'm curious to see if this is Oil filter related -I know the PF64 has more holes on it than the UPF48R. I know on another thread there is a comparison between these two filters and just appearance tells me that the PF64 is less restrictive. Or could be nothing.

Edit: see post #31 for oil filter pics:

Did you switch to 15w50? This is recommended for track events and will help in oil temps.

Just to make it clear, 15W-50 actually increases oil temps; it just lubricates better at very high temps, which is why GM recommends it, not to lower temps.

Not this, but next. We are doing some camarillo autocross. By us, I mean some of the socal crew. We are then doing the pomona street machine challenge then the Hotchkis nmca event. And then... we will probably get a track day coordinated.

I ran streets of Willow last year on July where it was freakin 103 hot outside. tires were sticking like crazy, my temps got up to 250, but the car never showed any signs of slowing..

X, why does it increase temps? My understanding is it doesnt shear at higher temps like lower viscosity oil hence like you said it lubricates better but havent thought about temps yet. Pump might work harder too a bit.

By the way I run 5w-50 amsoil, would recommend that over 15w-50, the 15 at colder temps needs to be warmed up good.

Have you taken off the LS7 valve covers off? I took mine off. I'm sure that helps a little bit by letter the hot air go up and away.
